I’m a self-taught backyard pitmaster who’s been smoking meats for over a decade.
As with any new skill, the early days left quite a bit to be desired. Believe me when I tell you there’s nothing worse than disappointing a crowd of hungry people when you feed them smoked shoe leather instead of something tasty, mouth watering, and delectable, like these:
But, thanks to a couple brave and willing guinea pigs, and lots of trial and error, I finally got it figured out.
Now I want to share my tricks and secrets with you.
